mmmm… Unfiltered honey. This honey is from Three Bees, a fantastic new supplier of Honey! The honey is delicious, especially filtered, but I’ve opted for the stuff with bits of hive and bees in it, convinced as I was by this very interesting book. Honey is already pretty good stuff, but when you add Pollen, Propolis, Royal Jelly, Bee Venom, and then yeast, fermenting it into mead, you create a pretty potent potable. In ancient times, this was the norm, as separating honey was a difficult task, especially in the case of heather honey- as it is thixotropic. They just smooshed everything into the kettle, angry bees and all, and fermented the result!
